Although regular cocoa looks similar to raw cacao (and is also spelt in a deceivingly similar way), the process of roasting the regular cocoa at high temperatures reduces it’s enzyme content and lowers the overall nutritional value.
As is the way with many other foods, you are able to retain the highest amounts of nutrients when we eat it in its raw form. The process of cold-pressing unroasted cocoa beans keeps the living enzymes in the cocoa while removing the cocoa butter, and in turn removing all the fat.
Raw cacao is high in antioxidants that help to protect our nervous system and assist in reducing the risk of cardiovascular disease. Antioxidants neutralize toxins, relaxing your blood vessels and in turn, lowers blood pressure.
As well as increasing the levels of your neurotransmitters that help keep our moods up, raw cacao is also full of minerals such as zinc, copper, calcium, magnesium, manganese and iron.
